So, since having burritos at a friends engagement recently.. I am obsessed.
Saturday arvo I decided to create my own at home and I am sure glad i did!

WHAT YOU NEED/WHAT TO DO:

Taco/Burrito wrap:
1 cup BESAN FLOUR (1/4 cup per taco)
1 cup of WATER WHISK IT UP TIL SMOOTH. FRY INTO LITTLE PANCAKES
1/4 Teaspoon of Asafoetida
(or garlic powder)
S & P
Sprinkle of cumin and/or garlic.

BEANS:
1 can of KIDNEY or BUTTER BEANS
1 bunch of SPINACH
2 cloves of GARLIC SAUTEE GARLIC, CUMIN, PAPRIKA, CHILLI. ADD SPINACH TIL ITS WILTED.
1 Tbls SMOKED PAPRIKA DRAIN BEANS & LEAVE A LITTLE OF THE THICK BRINE (THIS WILL HELP THICKEN)
2 Tbls CUMIN ADD BEANS AND TOMATOES AND ALLOW TO COOK, THICKEN AND GET DELICIOUS!
1 tsp SWEET PAPRIKA
1 tsp CHILLI FLAKES
1 can of TOMATOES

SALSA:
3 TOMATOES
1 AVOCADO
1 CUCUMBER CHOP IT ALL UP. MIX IT THROUGH WITH LIME JUICE, S & P.
1 GARLIC clove
1 LIME
CORIANDER TO TASTE
S & P

+ PLENTY OF SHREDDED RED CABBAGE & BABY SPINACH.

ADMIRE THE BEAUTY OF THIS BAD BOY. ENJOY AND REPEAT!
